A year after we started the 292 food truck quite a lot has changed.

As with any new enterprises some things don’t work, and others work surprisingly well.
What has worked well all the time is our food concept. It is really popular with locals and tourists alike.
Even if the main dishes, the panini and the fritti (deep fried fish and seafood) are basically the same, the menu has developed into including a few smaller and vegetarian dishes. Food which you can eat while you wait for the main dish. What is still missing is a dessert, we have not had the resources to develop the ice cream sandwich we started to think about last year. But we have done other things. This summer the Comune (local authorities) allowed us to have tables and chairs on the stone terrace just above the beach in S’Archittu. We got a new truck where we can make cocktails apart from receiving payment and serving beer and wine.
What has been difficult is to find the right staff. We need people with restaurant experience who are prepared to work a lot during the intense and quite short summer season. The combo is rare, so now we feel blessed with finally having a good and knowledgeable team. Leonardo is still supervising the menu and sometimes helps out but is less available as he is consulting on the east coast.
Who are our guests? They are very diverse. Many surfers who come to the truck after a day on the waves. People who live the year around in the village. Families with younger children who feel the truck has a good attitude and the children can run around if they want to. Anybody who enjoys a glorious sunset on the beach while eating an inexpensive but good meal.
And yes, we are proud. Proud of that we so far have had nothing but praise for the food. Proud for having developed a new type of business in this area which sometimes feels godforsaken despite all its churches. Proud of paying good wages, social security, and pensions. And we know that many Cuglieritani also are proud of the truck. They see that the food has clear roots in Sardinian raw materials and traditions, but with a modern twist.
An example is the 292 cocktail. We developed a cocktail with ingredients solely from the 292 road between Oristano and Alghero; Vernaccia wine which is the oldest type of grape here (and maybe in Europe actually), Vermouth and Bitter (like Campari) from the Oristano producer Silvio Carta, fresh lemon juice and our own syrup made from local brown sugar and ginger. It is served with an orange slice and a sprig of rosemary. A tribute to the Sardinian west coast. Our way. (And yes, the cups are biodegradable, like all our plates and cutlery).
